This Mint Chocolate Chip Smoothie Bowl was inspired by @katsabre who ate Mint Chocolate Chip ice cream right in front of me and didn’t offer me any!!!
😲
Jk! We were on a Zoom call! But seriously, these smoothie bowls have been such a great healthy alternative to ice cream when my sweet tooth strikes.
😋
Here’s how to make this Mint Chocolate Chip Smoothie Bowl:
Ingredients:
1 tbsp chia seeds
1 serving vanilla protein powder
1 handful spinach or kale
1 tsp mint extract
1/2 ripe banana
1 tbsp coconut oil
1 cup milk of choice or water
2 cups ice
1 tbsp stevia sweetened chocolate chips

Instructions:
Add all ingredients, except chocolate chips, to a high speed blender.
Blend till completely smooth. You may need to scrape down the sides of the blender a few times.
Transfer the smoothie into a bowl.
Top with chocolate chips and enjoy immediately!

They share some perspectives that they believe will be helpful especially with all the chaos currently going on.
