It’s time to Salsa!
I am so excited to be writing for E-Bubble Life magazine this year! E-Bubble Life is a free online magazine from BubbleMuffin.com, a website dedicated to making healthy eating fun and yummy! Both kids and adults will learn to cook fun recipes and get creative in the kitchen.
Since I have three young kids, I am always so pleased when they ask to help me cook. I think it is an important skill to have, as well as helping them understand where food comes from and its role in leading a healthier lifestyle.
That’s why partnering with E-Bubble Life magazine is so much fun for me! I get to come up with fun new recipes and share them with people who are also looking for ways to get kids cooking.
My first recipe for E-Bubble Life magazine is a super easy Tomatillo and Avocado Salsa. This recipe only needs 5 ingredients and it is packed with bright, citrusy flavor. Kids can easily help make this recipe if you opt for using a food processor to make a smoother consistency salsa. Alternatively, kids can help stir all the ingredients together after you have chopped everything up.

Note that there is a glitch in step 1 of the recipe. Just ignore where it says “Whisk together the syrup, cocoa and eggs”. That step was obviously not intended for the salsa recipe.
Breakfast of Champions
One of my favorite ways to use this salsa is in this Mexican Inspired Breakfast Stack. I love breakfast so I’m always trying out new flavors to add to my breakfast food. This salsa has such a bold, vibrant flavor, which contrasts so well with the unctuousness of the eggs and the crunch of the toasted tortillas… delish! The sprinkling of cilantro and queso fresco on top really takes this breakfast to the next level. This Mexican Inspired Breakfast stack is so easy to make and it looks so fancy!

- 2 tortillas
- 2 eggs
- 1 tbsp cilantro leaves chopped
- 1 tbsp queso fresco
- Non-stick spray
- Tomatillo Avocado Salsa from E-Bubble Life Magazine
Place the tortillas on a cookie sheet and broil in the oven till golden brown on each side. Allow to cool.
In a medium sized saute pan, spray with non-stick spray and heat over medium high heat.
Once the pan is hot, crack the eggs into the pan ensuring they are kept separated. Cook till the egg whites are cooked through but the yolk is runny (if that’s what you like!) Alternatively, cook the eggs to your liking.
To assemble, place a crispy tortilla on a plate, top with one of the eggs, ½ tbsp cilantro leaves, ½ tbsp queso fresco and 1 tbsp of the Tomatillo Avocado Salsa. Repeat with the remaining tortilla, egg, cilantro, queso and salsa.
