These recipes are ones that are quick and easy to make, as well as being totally delicious and healthy.
And to celebrate the upcoming launch of my new digital course, 30 Minute Meal Prep, I am sharing one of the recipes that I actually cook for the exclusive “Meal Prep with Me” cooking video in my course. That recipe is the Green Curry Chicken recipe.
My family absolutely loves this recipe and it couldn’t be simpler to whip up. The green curry is not set-your-tongue-on-fire spicy, but it is very flavorful, which the kids and the hubby can’t get enough of. Leftovers reheat very well and the curry can be eaten with or without rice.
I love meal prep like this – quick, easy and delicious! No overwhelm, no stress but lots of healthy and tasty food for several meals. Here are my Top 5 Healthy Meal Prep Recipes! I have included a mixture of sweet and savory recipes, perfect for everything from breakfast, lunch, dinner, snacks or dessert!

I love a good meal prep breakfast and this Pumpkin Protein Oatmeal is no exception! I usually make a double batch of oatmeal, eat one serving then refrigerate the second serving for another day during the week.
Don’t worry if you don’t like pumpkin or its not the Fall season. You can substitute the pumpkin for mashed bananas or apple sauce.

This healthified Banana Nut Bread is quickly becoming my go-to recipe for any ripe bananas I have lying in my fruit bowl. I love how filling this Banana Nut Bread is – all due to the additional protein and healthy fats from the almond flour.
This recipe is also so easy to make! I love to make a double batch and give one loaf away to a friend. You can also freeze the loaf after slicing, and thaw a slice or two whenever you want a quick, warm snack or breakfast treat.

This is the most flavorful and easy salad ever! I love that you can literally throw anything you like into this salad and simply dress it with a quick lemon dressing and a sprinkling of everybody’s favorite, Everything Bagel seasoning!My fave ingredients for this salad are avocados and red onions. So good!

4. Superfood Asian Chicken Soup
I love soups when the weather is getting cooler. This chicken soup has a tasty twist with the addition of some yummy asian flavors. I especially like the superfood ingredients to make this comforting childhood classic a nutritious and immune boosting soup!

5. Green Curry Chicken
Our family fave! This Green Curry Chicken is soooo easy and flavorful. You get lots of help from the store by using a pre-made Green Curry paste. You could substitute red curry paste in this recipe too.
I love to make this a true one-pot meal by adding in sweet potatoes and having that as our starchy carb instead of rice.
