Optional toppings: sesame seeds, cashews, or green onions
Spiralize the zucchini and set aside. If you don't have a spiralizer, just use a vegetable peeler to shave long thick strands off of the sides of the zucchini till you reach the core. Then repeat on all sides. Set aside.
In a medium sized bowl, mix together the garlic powder, sesame oil, soy sauce and sambal oelek or chili sauce of choice, to make the dressing.
Add in the zucchini and toss together thoroughly with the dressing.
Serve with your fave protein and top with sesame seeds, cashews or green onions, as desired.
