Fig Newton Protein Balls

Inspired by the childhood fave, Fig Newtons, these protein balls have the same flavors but more protein, crunch and deliciousness!

Ingredients

  • 1 cup figs, soaked in warm water for 10 mins then drained
  • 1/2 raw almonds
  • 2 tbsp vanilla protein powder

Instructions

  1. In a high powered blender or food processor, add the figs and blend till a thick paste or a ball forms.
  2. Add the almonds to the high powered blender or food processor and blend till the almonds break up and are incorporated into the figs.
  3. Add in the protein powder and blend once more. If not getting good mixing, turn the dough out into a separate bowl and mix in the protein powder. The dough should stick together when pinched.
  4. Scoop tablespoons of the dough and roll into balls. Store the Fig Newton Protein Balls in an airtight container for up to one week.
