A superfood rich and easy recipe to help you fight inflammation in a way that tastes delicious!
Heat coconut oil in a saute pan over medium heat.
Add the ginger and saute till translucent, about 3 minutes.
Add the turmeric and cumin, and stir to combine. Heat till fragrant.
Add the minced garlic in to the pan and stir.
Add the cauliflower florets into the spice mixture and stir to evenly coat.
If the cauliflower is not very moist, add in about 1/8 cup of water and cover the saute pan. Cook over medium low heat till the caulifower is tender.
Once the cauliflower is cooked, add the salt, raisins, cashews and cilantro to the pan. Gently toss to combine.
Squeeze in the juice of about half of the lemon. Stir again.
Taste to see if any additional seasonings are needed e.g. more salt, lemon juice etc.
Serve warm. You can also add your favorite protein to this, such as chicken or fish.
