Chocolate Coconut Peanut Butter No-Bake Cookies

A super easy and delicious no-bake cookie that has no sugar! Inspired by the Keto No Bake Cookies from How to This and That.

Ingredients

Ingredients:

  • 1 tbsp stevia
  • 2 tbsp coconut oil
  • cup peanut butter
  • 1 tsp vanilla extract
  • 2 tbsp raw cacao powder
  • 1 cup unsweetened coconut flakes
  • 1 cup almond slivers

Instructions

Instructions:

  1. In a large bowl, add coconut oil and if not a liquid, heat up in the microwave in 20 second increments till it melts.
  2. Add the stevia to the coconut oil and stir well.
  3. Add the peanut butter, vanilla extract, cacao powder, coconut and almonds into the coconut oil/stevia mixture.
  4. Fold all the ingredients together very well to create a really thick batter. The batter should be so thick that it stays clumped together.
  5. Line a cookie sheet with parchment paper.
  6. Using a small ice cream scoop, or two spoons, take scoops of the batter and place onto the cookie sheet. Flatten down the top of the cookie slightly.
  7. Place the tray in the fridge for at least 30 mins to allow the cookies to firm up.

Keep leftovers in the fridge for up to one week.
