Mexican Inspired Breakfast Stack

A super easy, but very fancy looking, breakfast, infused with extra flavor from the Tomatillo and Avocado salsa.

  • 2 tortillas
  • 2 eggs
  • 1 tbsp cilantro leaves chopped
  • 1 tbsp queso fresco
  • Non-stick spray
  • Tomatillo Avocado Salsa from E-Bubble Life Magazine



  1. Place the tortillas on a cookie sheet and broil in the oven till golden brown on each side. Allow to cool.
  2. In a medium sized saute pan, spray with non-stick spray and heat over medium high heat.
  3. Once the pan is hot, crack the eggs into the pan ensuring they are kept separated. Cook till the egg whites are cooked through but the yolk is runny (if that’s what you like!) Alternatively, cook the eggs to your liking.
  4. To assemble, place a crispy tortilla on a plate, top with one of the eggs, ½ tbsp cilantro leaves, ½ tbsp queso fresco and 1 tbsp of the Tomatillo Avocado Salsa. Repeat with the remaining tortilla, egg, cilantro, queso and salsa.
  5. Serve immediately!
