Banana Bread Muffins

These quick and easy muffins are the perfect way to get your kids in the kitchen! Plus they can personalize their muffins to make them extra special!

  • 1 large banana
  • 1 cup almond flour
  • 1/2 tsp baking powder
  • 1 tbsp monkfruit sweetener, or sweetener of choice
  • 1 tsp ground cinnamon
  • 1/8 tsp salt
  • 1 large egg
  • 1/8 cup coconut oil, melted and cooled slightly
  • 1 tsp vanilla extract

Optional Toppings

  • 2 tbsp chocolate chips
  • 2 tbsp chopped pecans
  • 2 tbsp peanut butter chips


  1. Preheat the oven to 350 deg F.

  2. Line a 12 cup muffin pan with 6 muffin liners.

  3. In a large bowl, add the banana and mash very well.

  4. Add in the egg, coconut oil, vanilla, salt, cinnamon, baking powder and sweetener or choice. Mix well.

  5. Add in the almond flour and stir till well combined.

  6. Scoop out the batter into the prepared muffin pan.

  7. Top the muffins with toppings of your choice. Some great ideas are chocolate chips, peanut butter chips, pecans, sunflower seeds, coconut, dried fruit etc. Make them your own!

  8. Bake the muffins in the preheated oven for 15-18 mins, until a toothpick inserted into the center of the muffin comes out clean or with a few moist crumbs attached.

  9. Allow to cool slightly before enjoying!
