An super cute and easy Easter treat that kids will love decorating. Plus it can be made low sugar too!
To a medium sized sauce pan NOT on the stove, add the milk, cornstarch, cocoa powder and monkfruit sweetener. Whisk mixture together until the powders have almost completely dissolved into the milk.
Place the saucepan on the stove, and turn the stove onto a medium low heat. Gently heat the pudding, whisking occasionally, until thickened. You want to the pudding to be thick enough to coat the back of a spoon and not immediately drip off.
Once pudding is at the desired thickness, remove the saucepan from the heat and allow the pudding to cool slightly.
Ladle the pudding into clear glasses or bowls for serving. Store in the refrigerator.
Add all the dry ingredients into a bowl, and mix well with a spoon.
Add the wet ingredients into a bowl and mix into the dry ingredients to create cookie crumbs as big as you want.
Store in an airtight container or resealable container.
Add the coconut flakes into a small resealable bag.
Add one drop of green food coloring into the small resealable bag, and seal the bag. Gently work the green food coloring into the coconut flakes till they are all the the same shade of green.
To a clear glass, cup or bowl, add a thick layer of chocolate pudding.
Sprinkle over some of the faux cookie crumbs in a thin layer.
Sprinkle over the green coconut flakes to look like grass.
Decorate with an assortment of Easter treats!
