4-Ingredient Roasted Red Pepper Dip (and why I love this time of year)

The Academy Awards were last Sunday and it is one of my favorite nights of the year for 3 reasons:

  1. I love movies
  2. My husband loves movies, and...
  3. My husband and I met around this time of year and we watched the Oscars together... awww!!!

The story of how my husband and I met is really funny. I actually didn’t like him at first, then I was mad at him, then he was mad at me! Classic mature behavior of course! But we made up in the end, and three kids and a dog later, things turned out pretty good for us! I wanted to do something a little special this year while we watched the Academy Awards on TV. So, of course, I made us food! A few special appetizers to be exact. One of them was an impromptu dip that I whipped up with literally 4 ingredients that I already had in the house: Roasted red peppers, white beans, garlic and olive oil.4 Ingredient Roasted Red Pepper Dip with Cucumber SlicesThis dip turned out so good! The roasted red peppers gave the dip a smoky, sweet flavor, while the beans made it super creamy. I always like putting garlic in dishes because it adds an extra savory note, and a little olive oil gives a velvety texture. Smoky, sweet, creamy, savory - what’s not to love?!An extra special ingredient I added was smoked salt. It really gave an extra smoky touch to the dip. Of course, you don’t have to use smoked salt - regular kosher salt or pink himalayan salt will be delicious too. This Roasted Red Pepper dip is vegan and gluten free, especially if you serve it with cucumber slices, like I did. Of course, this dip would be great with any type of chip or vegetable too. I even used the leftovers of this dip as a sauce for our pan seared salmon dinner the next day. Talk about versatile!4 Ingredient Roasted Red Pepper Dip 2The second best part of this dip is that it comes together in minutes because all you do is throw the ingredients into a blender or food processor. I love dishes that are simple and quick to pull together. 4-Ingredient Roasted Red Pepper Dip

A super simple and easy-to-make dip, full of bright, bold flavors!

Ingredients:

  • ¾ cup roasted red peppers (drained of any liquid that is in the jar)
  • 1 cup white beans (such as cannellini)
  • 1 large garlic clove
  • 3 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a blender or food processor, add all ingredients except salt and pepper.
  2. Blend till well combined and to the desired texture. If you want the dip to be smoother, blend it for longer. For a chunkier dip, blend till just combined. 

  3. Taste dip and add salt and pepper to taste. Blend or stir once more to incorporate the salt and pepper.
  4. Pour into a bowl and serve with veggies and chips for dipping.

Keep in an airtight container in the fridge for up to 1 week.
