Kids in the Kitchen: BBQ Chicken and Healthy Rice Crispy Treats

In today's episode of Kids in the Kitchen, I shared two quick and easy recipes; my 3-ingredient Crockpot BBQ Chicken recipe and my Healthy Rice Crispy Treats recipe.
Both recipes are so simple to make as well as being delicious! I also talked about several substitutions you can make based upon what ingredients you have in the pantry.
3-Ingredient Crockpot BBQ Chicken
If you are looking for a foolproof easy dinner that the family will love, THIS IS IT! The crockpot makes this recipe a breeze. I love that fact that you just add 3 ingredients into the crockpot and then a few hours later, dinner is served!
Healthy Rice Crispy Treats
This recipe was requested by my friend, Randi (thanks Randi!). Rice crispy treats are such an awesome snack for kids and it is also so easy to health-ify. I made a couple of easy ingredient swaps to increase the protein and healthy fat content of this sweet treat, without sacrificing flavor. And, because this recipe is so easy to make, it is the perfect recipe to let your kids help out in the kitchen.
For both of these recipes, remember to make them your own! Use the ingredients that you love and that you have on hand, to make these recipes ones that you are going to enjoy eating with your family.

3-Ingredient Crockpot BBQ Chicken
A super simple yet bold flavored crock pot meal. The whole family will love this one!
- 4.5 lbs chicken thighs
- 2 tsp BBQ rub of choice
- 1 cup BBQ sauce, ( your favorite)

Place the chicken thighs in the crockpot insert.

Sprinkle the BBQ rub over the chicken thighs.

Pour the BBQ sauce on top of the chicken.

Place the lid on the crockpot and cook on high for approximately 4 hours or until the chicken is cooked through and falling off the bone.

Serve with your favorite sides for a BBQ meal like potatoes, baked beans and fresh veggies.
Healthy Rice Crispy Treats
Take this childhood classic and healthify it with delicious protein and healthy fats!
- 1/2 cup nut butter, (could also use tahini if needed)
- 1/2 cup maple syrup
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 4 cups puffed rice cereal, (or whatever cereal you have in the pantry)

Prepare a square baking dish and place a piece of parchment paper inside of it. This will help to remove the rice crispy treats once they have set up in the fridge.

In a large bowl, add the nut butter and microwave for 30 seconds to loosen up the nut butter.

Once the nut butter is warm, add in the maple syrup, vanilla and cinnamon.

Pour the puffed rice cereal into the large bowl and gently fold altogether. You want to thoroughly coat all of the cereal with the mixture.

Transfer the mixture into the prepared square baking dish and gently press down to form an even layer.

Place the dish in the refrigerator, covered, for about 30 mins to 1 hour, or until set.

When ready to eat, remove the rice crispy treats from the dish using the parchment paper and slice into 9 pieces. Enjoy!
Keep the rice crispy treats in an airtight container in the refrigerator for up to 1 week.
