Healthy Sweet Treats Weekend: Salted Dark Chocolate-Dipped Mangos

Day 2 of HEALTHY SWEET TREATS WEEKEND!!! Today's sweet treat is inspired by an awesome Costco find... Dark chocolate dipped dried mango slices. These were seriously good!!! And I even got my mum hooked on them!

I have been wanting to health-ify these treats since I love mango and I love chocolate. So any way I can increase my mango-chocolate consumption, I am going for it!

I found some amazing stevia sweetened dark chocolate at HEB and knew it would be perfect for this sweet treat! The dried mangoes do contain some sugar but I know there are other brands available at other stores that do not contain added sugar.

To offset the sweetness, I added the crunch of some pistachios and a sprinkling of salt. There's nothing better than when you get the perfect combination of sweet, salty, crunchy and chewy in one bite!

These sweet treats are so simple and easy to make. Literally 5 ingredients, including the salt, and one small bowl. I whipped up these beauties in only 10 minutes! Including clean up time!

I love how these little treats look so fancy, but really they are a cinch to make!Make sure you take a photo if you give this recipe a try! And tag me @nourish_with_renata and #nourishwithrenata! Would love to see what you make! And remember to come back tomorrow for the last healthy sweet treat!

Salted Dark Chocolate-Dipped Mango

A delicious salty, sweet, crunchy and chewy combo! Super easy to make too!

Ingredients:

  • 10 oz dried mangos
  • 4 oz Stevia Sweetened Dark Chocolate
  • 1 tsp coconut oil
  • 1/4 cup shelled pistachios (chopped)
  • Himalayan pink salt
  1. Place a piece of parchment paper on a large rimmed cookie sheet.
  2. In a small bowl, add dark chocolate and coconut oil. Melt in the microwave in 15 second increments, stirring well in between heating rounds. Chocolate mixture should be very smooth and shiny.

  3. Dip mango slices in the chocolate mixture and lay on the parchment- lined cookie sheet. Sprinkle with chopped pistachios and a small pinch of salt before the chocolate sets.
  4. Once all mango slices are dipped in chocolate, place cookie sheet in the fridge or freezer to allow the chocolate to set completely.
  5. Keep mango slices in the fridge or freezer in an airtight container. Before eating, allow the mango slices to come to room temperature.
