What do Mothers really want for Mother’s Day? Could it be an Everything Bagel Poached Egg Stack with Avocado Mash???

Guys! Mother’s Day is on Sunday! Did you get a present for your Mom, wife, grandmother, etc…. yet? What do you even get them for Mother’s Day??? Well, I am here to help you decode what Moms actually want for Mother’s Day.

What do Moms want?

On my Insta-stories, I ran a poll to see what moms would like for Mother’s Day. There were three questions:

  1. Do you want something new or homemade? 83% said homemade.
  2. Do you want something material or an experience? 90% said an experience.
  3. Do you want something sentimental or make a new memory? 56% said new memory

So these results indicate that Moms want a homemade new memory experience! Whaaattt?!?! No wonder everyone is confused on what to get their moms!

Expert Advice Needed

To decode these polls, I turned to one of my mom friends and my own Mom.

My mom friend and I talked about what she wanted for Mothers Day. She wanted to have a special day at the beach with her family and go out to dinner at restaurant that she liked. She also wanted a homemade card from her kids and for her husband to buy her some jewelry. This might sounds pretty typical but it actually fits in perfectly with the poll results:

  1. Something homemade: Mother's Day card from the kids
  2. An experience: a fun day at the beach
  3. A new memory: dinner with the family at a restaurant

Maybe these poll results are onto something...

I thought about what I would want for Mothers Day too. I would love anything homemade by the kids, like a card. And I would love for someone to make me a meal. That could be both a new memory and an experience since who knows what 3 kids under 5 years old could whip up in the kitchen!

For the final input, I consulted the ultimate expert on the subject...my mom! I asked her what some of her favorite Mothers days were. She said that she loved the homemade breakfasts-in-bed that my sisters and I used to make her. Honestly, we used to make her breakfasts-in-bed for all occasions like her birthday, my parents wedding anniversary, and, of course, Mothers Day. I think our cooking repertoire was pretty limited, mostly scrambled eggs, toast and chicken sausage. We may have branched out into pancakes every once in a while! I had actually forgotten that we used to do this until my mom mentioned it. I guess it goes to show you that new memories are made on things that you may not expect, but it means so much to someone else.

What does all this mean?

I think the poll results really boil down to one vital point: Moms just want to be appreciated!!! Yes, that is the secret!!! The way that you show this appreciation can be through a homemade item, a fun experience, creating a new memory with them or anything else you can think of. That is really the key here: think of some special way to show your appreciation. I like to show appreciation through food gifts, but I also like to think of gifts that the recipient probably wouldn’t get themselves e.g. massages, nice clothes or shoes, books, jewelry, special framed photos, cooking classes, movies, music, tickets to a concert/event, etc. The way you show appreciation doesn’t need to be expensive or a grand gesture. It just needs to be sincere, loving and most of all, showing understanding and gratitude for all the things that Moms do for their family.

A Nostalgic Breakfast Updated

Thinking of how my sisters and I used to make breakfast-in-bed for my Mom when we were kids, made me wonder, “What would I cook for my mom nowadays?” This idea became an awesome updated nostalgic breakfast: Everything Bagel Poached Egg Stacks with Avocado Mash. My mom loves bagels and avocado, and I think eggs are always great for breakfast. So why not combine all these delicious ingredients into one incredible breakfast?!

Everything Bagel Poached Egg Stacks with Avocado Mash

The key seasoning in this dish is Everything Bagel seasoning! This version is super quick and homemade, adapted from recipe-diaries.com. This seasoning is so delicious!!! It gives that bagel flavor to the recipe without eating an actual bagel.

Everything Bagel Seasoning

Instead of a bagel or some other kind of bread, I swapped it for sweet potato toasts. I love this alternative to bread because the slight sweetness is a perfect contrast to the savory Everything Bagel seasoning. I especially like the crispy crust! Yum!

To top the sweet potato toasts, I made a mixture of mashed avocado, lemon juice and nutritional yeast. The nutritional yeast gives a cheesy flavor to the dish. It might sound kinda weird to add this to the avocado, but it actually tastes delicious. That slightly cheesy flavor reminds me of the cream cheese flavor that you would typically have with bagels.

To amp up the nutritional value of the meal, I also included a quick and easy kale salad. This salad acts as a bed for the poached egg stacks and I love kale in everything so it was my duty to add it here lol! My mom also grows kale so it was a little nod to her green thumbs.

Lastly, poached eggs! This is probably my favorite way to cook eggs because it so fast and you have a built in sauce for your dish! Of course, you could sub scrambled eggs or whatever kind of eggs you like instead.

This dish turned out so delicious! I love the Everything Bagel seasoning on the eggs. It really gives you a punch of delectable savory flavor, which I adore! Plus, it looks absolutely gourmet - like something you would get at a restaurant for brunch. I plan to make this dish for my Mom when I next see her. I think she is really going to like it! Maybe this simple and easy recipe could serve as a possible breakfast-in-bed for the Mom in your life too!

Everything Bagel Poached Egg Stacks with Avocado Mash

This simple recipe would be a perfect breakfast-in-bed idea for the Mom in your life. Just a few easy steps, and you’re on your way to a gourmet looking breakfast made right at home.

For the Everything Bagel seasoning:

  1. 1 tbsp garlic powder
  2. 1 tbsp onion powder
  3. 1 tbsp poppy seeds
  4. 2 tsp kosher or smoked salt
  5. 1 tbsp sesame seeds

For the Sweet Potato Toasts:

  1. 1 large sweet potato, washed and cut into 1” thick rounds
  2. ½ tbsp olive oil
  3. ½ tsp Everything Bagel seasoning

For the Kale Salad:

  1. 4 cups of kale, washed and finely sliced
  2. 1 tbsp fresh lemon juice
  3. 1 tsp olive oil
  4. Pinch of salt and pepper

For the Avocado Mash:

  1. 1 large avocado
  2. ½ tbsp lemon juice
  3. 1 tbsp nutritional yeast
  4. ½ tsp kosher or smoked salt

For the Poached Eggs:

  1. 4 eggs
  2. 1 tsp white vinegar

<strong>For the Everything Bagel seasoning: </strong>

  1. Mix all ingredients very thoroughly in a small bowl and set aside.

<strong>For the Sweet Potato toasts:</strong>

  1. Preheat the oven to 425 deg F.

  2. Place the sweet potato toasts on a baking tray.

  3. Drizzle over olive oil and rub onto each sweet potato slice.

  4. Generously sprinkle on the Everything Bagel seasoning.

  5. Roast in the oven for 15 mins then flip over the sweet potato toasts.

  6. Cook for another 5-10 mins till sweet potatoes are cooked through.

<strong>For the Kale salad: </strong>

  1. In a large bowl, mix all ingredients together and set aside.

<strong>For the Avocado Mash:</strong>

  1. In a medium bowl, mix all ingredients together, mashing the avocado with a fork. Set aside.

<strong>For the Poached Eggs:</strong>

  1. In a medium sized saucepan, add in enough water to fill a couple inches of water in the pot.

  2. Add in the vinegar.

  3. Heat the water over the stove top on a medium heat, till the water is barely simmering. Turn the heat down slightly to medium-low. You do not want a rolling boil to poach the eggs.

  4. Gently and slowly crack an egg into the water, being very careful not to break the yolk. Once the egg is in the water, carefully add the second egg. I recommend only cooking 2 eggs at a time. For a runny poached egg, I recommend 3-4 minutes of cook time.

  5. Once the eggs are done, use a slotted spoon to remove it from the pan.

<strong>To assemble:</strong>

  1. Arrange a handful of Kale Salad in the middle of the plate

  2. Add 2 Sweet Potato toasts onto the Kale Salad.

  3. Top the Sweet Potato toasts with a spoonful of Avocado mash.

  4. Carefully place one poached egg on top of each sweet potato toast.

  5. Generously sprinkle on more Everything Bagel seasoning!
