Easy Protein Waffles
From Disastrous to Delish!
Have you ever tried a recipe you saw on Instagram only to have it turn into a hot mess?
That's exactly what happened to my friend Anne. She messaged me one morning saying that her protein waffle recipe didn't turn out and could I help?
You bet I can!
And that's how I came up with this super easy and delish protein waffle!
Breakfast Made Easy
Waffles are the kind of breakfast item that you think you can only have on the weekends. They are usually dripping with syrup, dolloped high with whipped cream and the only fruit around is the maraschino cherry to top the decadence-on-a-plate!
So when the idea of making a healthier waffle popped up, I couldn't resist!
These Easy Protein Waffles turn the traditional waffle ingredients on its head, but without sacrificing the flavor and the feeling of a special breakfast.
Instead of traditional flour, I use a vegan protein powder. This helps reduce any potential allergens that can cause inflammation in the body for some people, such as gluten and dairy. I find that most breakfasts don't contain much protein, so this is an easy swap that helps you stay fuller for longer, and fuels and repairs your muscle fibers too.
I use monkfruit sweetener to sweeten the waffle batter. This is my favorite alternative sweetener due to its blood sugar regulating properties.
Lastly, the waffle gets some lift with the help of baking powder (you can use an allergen friendly variety here) and an egg to bind it all together.
This Protein Waffle comes together in no time, making it a great weekday breakfast idea, and it is easy to meal prep.
Easy Protein Waffles
Here's the recipe for my Easy Protein Waffles:
Easy Protein Waffle
A quick and easy waffle that you can feel good about eating!
1/4 cup vegan vanilla protein powder
1 tbsp monkfruit sweetener (optional)
1 tsp baking powder
1 egg
1/3 cup water
Whisk together the protein powder and baking powder.
Add the egg and whisk to form a paste.
Gradually pour in the water while whisking so the batter is not lumpy.
Spray a waffle iron with non stick spray of choice.
Cook in a preheated waffle iron. You should be able to make two waffles.
Top with your fave waffle toppings. I used peanut butter, berries, greek yogurt and stevia sweetened chocolate chips!
