Girls Night Cooking Class: Food Kids Will Eat!

Who else struggles to get their kids to eat vegetables???
There are definitely those meals where I try to make a new vegetable dish and the kids look at me like they are thinking “you want me to eat whaaaat?”
But luckily, I’ve found a few secret recipes that my kids love and they don’t even realize there are vegetables in it. And to make it even better, the recipes are super easy to make and taste delicious!
I had the great pleasure of teaching a cooking class to a group of amazing moms a few weeks ago. The theme of this class was new recipes that kids will eat! I was so happy to be able to share three of my favorite recipes, that my kids love to eat, and they are also healthy, delicious and simple to make!
The Menu
For this menu, I decided to go with foods that were familiar to everyone but had a fun, healthy twist to them. Here’s the menu:

Almond Flour Biscuits with Strawberry Orange Jam
This is my favorite biscuit recipe since it’s so easy and versatile. I’ve used it as part of Strawberry Shortcake and as a Scone too. These biscuits are a great alternative to an All Purpose Flour biscuit, since it is higher in protein and healthy fats. It has a slightly nutty taste, which I like!
I paired this biscuit recipe with an easy strawberry orange jam. The jam is thickened with chia seeds, a superfood ingredient that is high in omega-3, protein and fiber. I also like that you can literally make this jam while the biscuits are cooking and voila! An easy breakfast or afternoon snack the kids will love!
Chocolate Peanut Butter Smoothie
This smoothie is my family’s all time favorite. It tastes like a Reese’s Peanut Butter cup! The thing that I like the best about this recipe, is that it contains fruits and vegetables, as well as other superfood ingredients. Plus, it serves as a speedy breakfast or an indulgent tasting dessert.. And its good for you!
Avocado Bean Dip with Homemade Chips
What kid doesn’t love chips and dip? In fact, I think adults and kids love chips and dip!
One of my favorite dips is guacamole. Since guacamole is primarily avocado, which is full of healthy fats, I wanted to increase the protein content to try to balance the macros more. Cannellini beans were the answer! These beans are very soft and blend to a smooth consistency. They are also high in fiber which helps you feel full and there’s some kale hiding in this dip too!
The homemade chips are incredibly to make in either the oven or an air fryer if you have one. An easy recipe for air fryer chips is in my Instagram highlights. Making the chips in the oven takes a little longer, but you can make a lot of chips at one time. These chips can also be flavored with any of your favorite spices, like garlic powder, onion powder or even a hit of spicy cayenne.

A Fun Night of Cooking
I had such a blast cooking with this awesome group of women! They were all so fun and welcoming, and we definitely laughed as much as we cooked! They had so many fun stories and asked some great questions about food and cooking too. Shoutout to the incredible women who came to the cooking class, and to Courtney for asking me to share recipes with her and her friends.

Avocado Bean Dip with Homemade Chips
Who doesn’t love chips and dip?! This version is loaded with healthy fats from the avocado, protein and fiber from the white beans and added micronutrients from the spinach hidden inside the dip! Adapted from a Giada De Laurentiis recipe.
Ingredients:
For the Avocado Bean Dip:
- One 15-ounce can cannellini beans (rinsed and drained)
- 1 large avocado (seeded, peeled and coarsely chopped)
- 1/2 packed cup baby spinach
- 1/3 cup fresh cilantro
- 2 tablespoons fresh lemon or lime juice
- 1 clove garlic (smashed)
- 1 teaspoon salt (plus extra for seasoning)
- 1/4 teaspoon freshly ground black pepper (plus extra for seasoning)
- 2 tablespoons extra-virgin olive oil
For the chips:
- 4 corn or flour tortillas
- 1 tsp olive oil or melted coconut oil
- Pinch of salt
- Optional spices: Ground Cumin (Ground Chili Powder, Garlic or Onion Powder)
For the chips:
- Preheat the oven to 350 deg F.
- Cut each tortillas into 8 triangles.
- Add the tortilla triangles into a large bowl, and add the olive/coconut oil, salt and ½ tsp of any optional spices you would like. Depending on how bold you want the flavor to be, you may like to add another ½ - 1 tsp of optional spices.
- Lay the tortilla triangles on a cookie sheet in a flat layer with no overlapping. You may need more than one cookie sheet to do this.
- Place the tortillas in the oven and bake or 15-18 mins until the chips are golden brown and crispy.
- Remove from the oven and allow to cool slightly before serving.
For the Avocado Bean Dip:
- Place all the ingredients into a high speed food processor or blender.
- Blend all together to desired smoothness.
- Taste and add more salt and pepper as desired.
