I love Cereal!

Yes! It might sound crazy but I didn’t grow up in the US so there are a lot of American cereals that I’ve never tried before! So, what better way to try new things, than right now, on camera. 

I have been super shocked by the cereals I’ve tried. Some have tasted amazing. Some have been pretty unappealing. I mean, why are Golden Grahams so bitter???

One of the things I’ve been shocked about is the amount of sugar in most cereals. It’s off the charts! I always balk when I see sugar as the second, or even sometimes the first ingredient on a cereal. Or BOTH the first and second ingredient!

Because of that, I wanted to come up with a healthy cereal, lower in sugar and higher in protein, than most other cereals. 

And that’s when I decided to make one of my family’s favorite cereals at home: Cinnamon Toast Crunch!

Healthy Cinnamon Toast Crunch is actually very easy to make. It only uses 5 ingredients and cooks in less than 10 mins!

Plus I love the fact that this recipe is high in protein and healthy fats. Both of those components help you to feel fuller for longer. 

When this cereal bakes, it fills the house with that delicious aroma of cinnamon. It makes your whole home become instantly more comforting and joyous!

Healthy Cinnamon Toast Crunch

A protein-rich twist on a classic cereal, Cinnamon Toast Crunch. This homemade cereal comes together in no time and is a breakfast you can feel good about eating!

  • 2/3 cup Vanilla protein powder
  • 1/4 cup tahini
  • 2 tbsp monkfruit sweetener, (divided)
  • 2 tsp ground cinnamon, (divided)
  • 1 egg
  1. Preheat the oven to 400 deg F.

  2. In a large bowl, add the vanilla protein powder, tahini, 1 tbsp of monkfruit sweetener, 1 tsp ground cinnamon and the egg.

  3. Mix together till a soft dough is formed.

  4. Take a non-stick mat, or parchment paper, and place on your counter top. Put the dough in the middle of the mat/paper, and cover with a second non stick mat or piece of parchment paper.

  5. Using a rolling pin on top of the second non-stick mat or parchment paper, roll the dough out to approximately 1/4"-1/2" thickness. Remove the top non-stick mat or piece of parchment paper.

  6. Using a knife, score the dough into small squares, approximately 1" x 1".

  7. In a small bowl, mix together the remaining 1 tbsp monkfruit sweetener and 1 tsp ground cinnamon.

  8. Sprinkle this monkfruit sweetener/cinnamon mixture over the top of the cereal.

  9. Carefully pick up the non-stick mat or parchment paper underneath the cereal, and place it on a baking tray.

  10. Bake in a preheated oven for approximately 5 minutes, then remove from the oven.

  11. Use another knife to re-cut the squares and help to separate the individual cereal pieces.

  12. Return the baking tray to the oven and bake for another 5 mins, or until the cereal pieces are cooked through and golden brown. TIP: Watch out for any thinner pieces of cereal burning around the edges.

  13. Remove cereal from the oven and allow to cool completely before storing in an airtight container.

  14. Serve cereal with your fave milk of choice!
