Stove Top Pumpkin Granola

I love breakfast! I'm one of those people that wake up hungry. Even if I've had a big meal the night before and gone to bed feeling super full and bloated.
I actually wake up even hungrier the next day!
I know, it's crazy, but for some reason that's just how my body works 🤷🏻♀️
Which is also why I love breakfast. Especially when I can have a quick and delicious breakfast on hand that will curb my hunger pangs.
I have been wanting to make a healthy granola recipe for awhile now, but couldn't quite figure out the flavors I wanted to use until my recent muse popped into my head... PUMPKIN!
What better way to ring in the Fall season that with a delicious Pumpkin Granola!
Pumpkin-y Goodness
You've probably seen a lot of pumpkin recipes around this time of year. While this may seem like a seasonal trend, there are actually a lot of nutritional benefits to eating pumpkin.
Pumpkin has a high fiber content, about 7g fiber in 1 cup of pumpkin. This is more fiber than you would get from eating two slices of whole wheat bread! Fiber also helps you to feel fuller for longer, as well as aiding digestion.
Pumpkin is packed full of beta-carotene, which converts to Vitamin A in the body. Vitamin A has many benefits including fighting free radicals in the body, helping your eye health, improving immunity, potentially lowering your risk of cancer and reducing blood sugar levels.
Stove Top Granola
This recipe for granola is made on the stove top! Yes, you do not need to use your oven at all!
What I like about stove top granola is that you don't have to dirty a whole lotta dishes, and all you need to do is some light stirring. So easy! I think it is ready to eat even faster too!
You can also keep a closer eye on the granola and make sure that it doesn't burn. And you can make sure that the dried fruit doesn't get even more dried out through overcooking.
Now for the seasonings! Since it is Fall, I had to add some pumpkin puree and cinnamon to the granola. This made the granola so flavorful and made the house smell so good! I love the smell of cinnamon to make our home warm and inviting for everyone to come and have breakfast.
To serve, you can use this granola to top your favorite greek yogurt or cottage cheese, eat it like cereal or just by the handful when a snack craving strikes!

Stove Top Pumpkin Granola
A quick and easy granola with pumpkin and cinnamon, toasted right on top of the stove.
- 1 tbsp coconut oil
- 1 cup old fashioned oats
- 1/2 cup sunflower seeds
- 1/2 cup pecan halves
- 1 tsp ground cinnamon
- 3 tbsp pumpkin purée
- 1 tsp vanilla
- 1/4 cup chopped dried fruit (e.g. dates, apricots, raisins, cranberries etc.)
- 1/4 cup coconut flakes
- Pinch salt

Heat coconut oil in a medium sized saucepan over medium heat.

Add oats, seeds, nuts and toss together till well combined.

Add cinnamon, salt and pumpkin puree and mix till pumpkin is evenly distributed throughout the mixture.

Add vanilla extract and stir again.

Toast granola over medium heat till golden brown, about 10 mins

Once golden, add in dried fruit, coconut and mix once more.

Allow to cool before storing in an airtight container or eating!
Store granola in an airtight container or resealable bag for up to 2 weeks.
