There is something so comforting (and admittedly I feel very accomplished) about cooking up a gorgeous dessert in only 80 seconds. 80 seconds! Talk about fast!These Chocolate Nutella Mug Cakes have my all time favorite flavors: Chocolate and Nutella. As a self-professed chocoholic, I am always looking for new and interesting ways to get more chocolate into my diet lol. But seriously, while I love chocolate, I also love finding healthy desserts that I do not have to feel guilty about eating.Chocolate Nutella Mug Cake Top ViewThese mug cakes are gluten free and actually use coconut flour. Coconut flour is high in fiber, protein and healthy fats, which makes it a nutrient dense alternative to normal wheat flours. Coconut flour has been shown to help with digestive health, maintain a healthy metabolism and blood sugar level. Using coconut flour in this recipe, does give a slight coconut-y flavor to the cake. I like coconut so I don’t mind this flavor at all. It’s a great compliment to the chocolate and Nutella flavors. The cake batter itself contains raw agave syrup as the sweetener, so anyone who is trying to limit their refined sugar intake can absolutely have this little sweet treat.What makes this mug cake extra decadent is the gooey Nutella filling. If you don’t like Nutella or would like an alternative filling, you could also substitute it with peanut butter or other nut/seed butters, your favorite jam or jelly, or even mix in chocolate chips.Chocolate Nutella Mug Cake with FillingTo take this mug cake to the next level, let’s talk about toppings! I love a dollop of whipped cream (dairy or coconut), plus fresh fruit and maybe a little extra Nutella drizzled over the top. Delish! One tip when making this mug cake is… do not overcook it! If anything, I would err on the side of slightly undercooking the mug cake when you pull it out of the microwave. The mug cake will continue to cook a little since it will be very hot. When you take the mug cake out of the microwave, if you see the cake pulling away from the edges of the mug, the mug cake is done. Allow the cake to cool for a few minutes before adding your favorite toppings. This Chocolate Nutella Mug Cake is one of the best, quick desserts ever! Chocolate Nutella Mug Cake

A healthified decadent dessert just for you! Super quick and easy to make.

Ingredients:

  • 2 tbsp coconut flour
  • 2 tbsp raw cacao powder (or cocoa powder)
  • ½ tsp baking powder
  • 1 large egg
  • 3 tbsp milk of choice e.g. almond (coconut, cow)
  • 2 tbsp melted coconut oil (cooled)
  • 2 tbsp raw agave (could use another liquid sweetener)
  • ½ tsp vanilla extract
  • 1 heaping tbsp of Nutella
  • Extra Nutella for drizzling on top
  • Garnishes: berries (whipped cream, nuts, coconut…. The options are endless!)

Directions:

  1. In small bowl, whisk together coconut flour, cocoa powder and baking powder.
  2. Add egg, milk, coconut oil, agave and vanilla and mix until everything is very well combined. If the mixture looks too dry, add 1 tbsp of milk and stir well. You want a cake batter-like texture.
  3. Pour 3/4 of the mixture into a large mug, then add 1 tbsp of Nutella on top. Do not mix in. Top with the remaining cake batter and smooth over the top.
  4. Microwave on high for about 80-90 seconds, depending on how strong your microwave is. You're looking for a visibly moist cake consistency. Definitely do not overcook. There will be some carryover cooking while the cake sits for a couple minutes before eating.
  5. Top with a drizzle of Nutella and your fave garnishes!
